Mother’s Day Breakfast for Under $10

We had my parents and my grandmother come over last weekend for Mother’s Day. It was easier to have everyone over at our house so that we wouldn’t have to pack up the kids and then we could get them down for a nap afterward without them falling asleep in the car. If our daughter or baby fall asleep in the car, they will generally go back to sleep inside the house. However, if our oldest son falls asleep in the car on his way home, he will NOT go back to sleep inside the house. I save myself the stress and don’t even attempt that anymore.

Now, let me tell you how the real breakfast went down after I snapped some photos (keeping in mind I’m not a photographer so, what you see is what you get). I pulled out some mixed/matched dishes- whatever was clean. I had to remove serveware from the table for space to eat and also to protect it all from, you know, little hands. Upon sitting down, my daughter spilled an entire cup of milk across the table cloth. After serving everyone up some food, my newborn got hungry so I needed to feed him. Welcome to real life!

9A49041F-643D-481C-90E5-89FBE02D897AFor Mother’s Day breakfast we had banana bread baked oatmeal, crustless quiche, cinnamon sugar English muffins, and cantaloupe, and you can serve all of this to eight people, all for under $10! Disclaimer: my grocery store is really great and I am able to get store brand items for less. You may or may not be able to have the same calculated costs as me based on your local store pricing. I also calculated the cost based on eight servings. You can multiply or divide as needed to make the porportions right for what you want to make.

Crustless Broccoli Cheddar Mini Quiches $2.35 for eight

You can find the recipe for the mini quiches here. For $2.35 and eight servings you will need to only do 2/3 of the recipe (the recipe serves 12). The cost above is for a broccoli and cheddar combination but you could try out different additions like peppers and onions or mushrooms and Swiss cheese.

Banana Bread Baked Oatmeal $3.25 for eight large servings

While the cost is just for the ingredients used in the Baked Oatmeal recipe, you can put out extra toppings like raisins, shredded coconut, brown sugar, or nuts and seeds. Here is my recipe for the Banana Bread Baked Oatmeal.

Cinnamon Sugar English Muffins $1.25 for eight muffin halves

4 English Muffins

1/4 cup butter

1/4 cup brown sugar

1 tsp cinnamon

Turn oven onto Broil setting. Cream together the ingredients and spread evenly on each muffin half. Broil in oven for 4-5 minutes. Enjoy!

Cantaloupe $2 for a whole melon

Strawberries would also be nice and I had a difficult time deciding between the two. There seems to be more fruit in the cantaloupe though if you want to get just one and have enough to serve more people.

Total cost: $8.85!

The oatmeal alone serves large portions. We didn’t even eat half of the whole casserole dish. We were able to save the rest for some weekday breakfasts to reheat. I love making a Baked Oatmeal for the week because it can last for a few mornings and is really rather cheap.

All of these things are super easy to make and are great together or can be made separately for lighter family meals. I hope you enjoy these budget-friendly breakfast dishes!

The mother’s day brunch Rachel made for the family was delicious. I’m not a quiche kind of guy but the egg and ham ones were very good. They would be good for a quick breakfast before work too. Thank you, Rachel, for having the local family members in for brunch.
